As early as the late 1800s, Tripperia Fiorentina Bambi began processing and selling the most iconic of all Florentine foods.
From the shop in San Frediano, where the business began, to the two current locations: one in Borgo San Lorenzo for production and one inside the Central Market, featuring the historic counter where you can find all kinds of offal.
Now, on the upper level of the Central Market, there’s a counter offering cooked dishes, tripe, peposo, and sandwiches.
For them, dress-style aprons made of tobacco-colored dyed linen with a logo print.
